Flights are via Istanbul with a total travel time of 12-15 hours. Turkish is a perfectly safe airline and thousands of religious Jews have taken their flights without issues. They are also a very good airline that still gives 2 free bags and they have an awesome Star Alliance lounge in Istanbul. Their Premium Economy comfort class product has rave reviews, so if you have the chance to upgrade to that at the gate on the cheap you should definitely go for it.
