There is now a Chabad House on Iceland, though I’m not sure if they are providing any kosher catering yet. Multiple DDF members have brought their own kosher food to Iceland without any reported issues.

If you are booking an airfare in the United States, U.S. Department of Transportation regulations require that, as long as you’ve booked a non-refundable ticket 7 days ahead of your flight, you’re entitled to hold your reservation and the fare and change or cancel your reservation within 24 hours of booking,
About cancelling, I think you can cancel within 24 hours, only if you use the USA site. Check it out.
